Moulin des Moines has milled organic grain in Alsace since the early 1970s, which makes it one of the true pioneers of organic agriculture in France. The mill is best known for its work with ancient grains, above all spelt, the nourishing cereal of medieval monasteries, alongside einkorn and heritage wheats. Flours, breads, pastas and pantry staples travel from the Alsatian mill straight to our shelves in Mauritius.
